The key to any Chicken Parmesan is the perfect sauce. It took me 6 months to perfect it, and I am proud to share it with you:
Homemade Tomato Sauce:
2 tbsp olive oil
1 medium onion, finely chopped
8 cloves of garlic, finely diced
1 cup of dry red wine, choose a good quality
2- 28 ounce can of organic whole tomatoes, blended until small chunks
2 tbsp of sugar
1 tbsp of crushed red pepper
1 tbsp dried basil
10-15 basil leaves torn into pieces
salt and pepper to taste
Directions: Heat the oil in large pot, I use a dutch oven. Add the onion and garlic and cook on medium-low until translucent, about 3 minutes. Do not let the garlic burn, and as long as the temperature isn't too high it won't. Add the wine and increase the temperature to medium-high. Cook for 1-2 minutes and add the tomatoes. Stir to combine before adding the the sugar, red pepper, and dried basil. Cover and cook for about 15 minutes on a medium-low setting. Add the fresh basil, stir, and continue cooking for another 15 minutes. The sauce should be slightly bubbling.
2- 6 ounce skinless, boneless organic chicken breasts, fileted to make 4 equal pieces
1 cup of organic bread crumbs
4 tbsp of freshly grated parmesan cheese
1 tsp garlic powder
1/2 tsp each salt and pepper
4 tbsp olive oil
2 cups of tomato sauce
8 ounces of mozzarella, sliced 1/4" thick, divided among the 4 pieces of chicken
Directions: Preheat the oven to 400 degrees. Put the chicken into a large plastic lock bag. Add the bread crumbs, 2 tbsp of parmesan cheese, garlic powder, salt, and pepper to the chicken. Close the bag and shake to coat. Heat the oil in an oven safe pan. Add the chicken and cook on 1 side for about 3 minutes, turn and cook on the other side for about 3 minutes. Add 1/2 cup of sauce, 1/2 tbsp of parmesan cheese, and mozzarella to each piece and put back in the oven for about 8 minutes. Turn the oven to broil, and place chicken under broiler until cheese is browned and bubbly.
Tips: Serve this with pasta, or even roasted potatoes. Complete the dish with a salad as pictured above. Enjoy!!
