I'm always looking for ways to incorporate sweet potatoes into our diet as they are incredibly nutritious. I like to mash them, or make sweet potato fries, but that can get a little old. I was making cheese steaks with a Tex-mex twist and that is how I created this recipe for sweet potato salad. There are no words that describe how easy and tasty this side dish was. A perfect make ahead dish because it needs to sit (give those flavors time to come together) and doesn't require refrigeration. Here's how I did it:
Roasted Sweet Potato Salad:
2 organic sweet potatoes, peeled and cut into 1/2 inch cubes
1 jalapeno seeded and roughly chopped
4 tbsp peanut oil (or you could use canola oil)
1 cup organic black beans
3 organic green onions, chopped
1/4 cup organic orange juice, freshly squeezed
2 tbsp organic lime juice, freshly squeezed
2 tbsp organic agave nectar
1/2 tsp chipotle chili powder
salt & pepper to taste
Directions. Preheat the oven to 400 degrees. In a large bowl add the sweet potatoes and jalapeno and toss with 2 tbsp of the oil. Put the ingredients on a cookie sheet and bake for 20-25 minutes, or until fork tender. While the potatoes and jalapeno bake, add the remaining oil, orange and lime juice, agave, and chili powder to the original bowl and whisk to combine. When the potatoes are done, add them to the bowl, along with the beans and green onions. Toss to combine and let sit for at least an hour. Do not cover as the potatoes will continue cooking.
Tip: As I said the inspiration for this recipe came from looking for a side dish to go with pepper jack cheese steaks. I actually doubled this dressing and used half as a marinade on 1 pound of flank steak that I had thinly sliced. While the steak was marinating, I cooked about 2 cups of peppers and onions. I removed them from the pan and cooked the steak. To assemble sandwiches, I used club rolls, added some steak, peppers and onions, and pepper jack cheese. I put the sandwiches on a cookie sheet and baked at 400 degrees for 5 minutes until the cheese was melted and the rolls were crispy.
