I have said this many times, my grandma is the inspiration for so much of what I cook today and why I cook today. Her influence knows no bounds in my life, and I am so happy to keep her memory alive through the amazing food she prepared every single day. This dish in particular, is something that she used to cook a lot before I was born but not so much after. Because of that, my first memory of this dish is the night my dad came to Alabama to be there for my high school graduation. It was a total surprise to me and one of my best memories. She cooked this for him that night because it's his favorite, and ironically enough, it has become one of my husband's favorite dishes, so I love to cook it, and I am so happy to have found that I can still cook this using products containing no preservatives, nitrates, or anything artificial. New and old memories, that's what cooking is to me. It could not be more simple. I didn't get too creative with the name, because simplicity and flavor is all that is needed in the description. Here's how I did it:
Shirley's One Pot Pork, Potato, and Sauerkraut:
1- 12 ounce package natural smoked sausage, sliced into bite-size pieces
1 pound organic, grass-fed pork loin chops
1 large organic yellow onion, peeled and sliced
4 medium or 5 small organic Yukon gold potatoes, peeled and quartered
4 cloves organic garlic, roughly chopped
4 cups organic sauerkraut
4 cups water
2 tsp pepper
salt (if needed once dish is cooked)
Directions: Add the sausage to the bottom of a crock pot (at least 4 quarts). Layer the rest of the ingredients one at a time and sprinkle the top, which should be the sauerkraut, with the pepper. Cook on low for 10-12 hours. Do not lift the lid during the cooking process. Once the time is up, stir to combine and serve.
Tip: I love serving this with corn muffins. Click here for a really easy and delicious recipe. I think the sweetness of the muffin adds a nice balance. I also like to take my potatoes out first, mash them a bit and add a little butter and salt. Then I put the sausage, pork, and sauerkraut next to it. It's so delicious!!
