So I was thinking about a side dish that would go nice with roast chicken and decided that I would make spinach salad. This is one of the easiest salads you can make with one of the most delicious dressings there is. Now I don't know about you, but I keep a jar of bacon grease by my stove. Any self-respecting Southern woman does. If you don't have bacon grease on hand at all times, have no fear. This recipe calls for bacon bits, so cooking the bacon will give you the grease you need to make the dressing.
3 cups of organic baby spinach
1/4 large red organic onion, sliced into think strips
2 organic eggs, hard boiled and sliced
6 slices of organic uncured bacon, cooked and cut into bite size pieces
Directions: Wash your spinach leaves and set aside to dry. Use a salad spinner if you have one. Add the spinach to a large mixing bowl and add the egg, bacon, and onion. Toss with some of the vinaigrette and enjoy!
4 tbsp warm bacon grease
2 tbsp white wine vinegar
2 tbsp sugar
2 tsp Dijon mustard
salt & pepper to taste
Directions: Place all the ingredients in a cup and whisk to combine. Season with salt and pepper.
Tip: Use a mason jar to make the dressing if you have one. They make homemade dressings a cinch to make. Taste your dressing before adding salt. Some bacon brands are more salty than others and you may find you don't need as much salt.
