Pancakes are such a perfect breakfast because they are easy to whip up and take no time to cook. These pancakes are a little special thanks to an unexpected ingredient: corn meal. Sweet and crunchy, these pancakes are made even special because of the strawberry syrup. If you don't have strawberries, no worries, you can use other berries, or none at all, they are delicious just the same. Here's how I created this easy recipe:
Cornmeal Pancakes with Strawberry Syrup:
1 1/3 cups organic all-purpose flour
4 tbsp organic cane sugar, divided
2/3 organic corn meal
4 tsp baking powder
1/2 tsp salt
1/4 cup organic unsalted butter, melted
2 large organic eggs
1 cup organic buttermilk
1/3 cup organic 2% milk
1/2 cup organic strawberries, diced
1/4 cup water
2 tsp corn starch
Directions: In a large mixing bowl, add the flour, corn meal, 2 tbsp of the sugar, baking powder, and salt. Whisk to combine. In a separate bowl, add the butter, eggs, buttermilk and milk. Whisk to combine and add the wet ingredients to the dry ingredients. Stir until just combined. If you have time to let batter rest for about 20 minutes, then do so. While the batter rests, you can make the strawberry syrup. Otherwise, just get the strawberry syrup going and then work on the pancakes.
In a small saucepan over medium heat, add the strawberries, 2 tbsp sugar, and the water. Cook for about 5 minutes until the mixture is bubbling and add the corn starch. Whisk to combine and lower the heat to simmer. Continue cooking until mixture is thick and syrupy. You can use the whisk to mash up any larger bits of strawberries, but I like it a little chunky.
Melt some butter on a griddle or your tried and true iron skillet (what I used). Use a 1/4 cup measuring cup to portion out the pancakes. Cook on medium heat until the edges start to bubble. You can use a spatula to lift up and look at the bottom. When it is browned, it's ready to flip. Cook for another 2-3 minutes on the other side. Resist the urge to push the pancake down. You want a nice fluffy pancake, which you won't get if you push it down. Top with warm maple syrup and some of your delicious homemade strawberry syrup. Enjoy!!
